Chocolate Cake, No Bake Oatmeal Fudge Cookies

What's Valentine's Day without sweet, delectable desserts?

This is the holiday of love and of chocolate, chocolate and more chocolate. Try out these desserts that will truly say, “I love you.”

Valentine’s Day Desserts

Chocolate Cake

Ingredients:

  • 2 cups flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 2 sticks margarine
  • 4 tablespoons dried cocoa
  • 1 cup water
  • 2 eggs
  • 1/3 cup buttermilk
  • 1 teaspoon vanilla

Directions:

  1. In a bowl, mix together dry mix of flour, sugar, and baking soda; set aside.
  2. In a pan, melt margarine, water and cocoa. Bring to a boil and pour over dry mixture.
  3. Add to the mixture the eggs, buttermilk and vanilla. Mix and pour into a greased cookie sheet. Bake at 400 degrees for 12-15 minutes.

For the icing:

  1. Melt 1 stick margarine. Add 4 tablespoons dried cocoa, 5 tablespoons buttermilk and bring to a boil. Add 1 box (1 lb.) powdered sugar, 1 teaspoon vanilla, 1 cup chopped pecans. Mix and spread over hot cake.

Note: Cake is best when served hot.

Serving suggestion: Serve with vanilla ice cream on the side.

No-Bake Oatmeal Fudge Cookies

Ingredients:

  • 2 cups sugar
  • 4 tablespoons cocoa
  • ¼ pound margarine
  • ½ cup milk
  • 2 ½ cups of quick oatmeal
  • 2 teaspoons vanilla
  • ½ cup of peanut butter.

Directions:

  1. Mix first four ingredients together in saucepan, bring to a rolling boil and boil for 1 minute.
  2. Remove from stove immediately. Add: oatmeal, vanilla and peanut butter.
  3. Stir until well-mixed, and drop by spoonfuls on waxed paper to harden.

Chocolate Cream Pie

Ingredients:

  • 1 cup sugar
  • 6 tablespoons all purpose flour
  • 2 tablespoons cornstarch
  • ½ teaspoon salt
  • 3 cups milk
  • 4 egg yolks, slightly beaten
  • 3 tablespoons butter
  • 1 teaspoon vanilla
  • ¼ cup or 5 tablespoons cocoa

Directions:

  1. Combine sugar, flour, cornstarch, salt and cocoa. Mix well, blend in milk. Gradually add egg yolks and then the butter. Cook until thick and smooth, stirring constantly. Do not under-cook.
  2. Pour into baked pie shell. Use whites of eggs for meringue. Use a heavy saucepan for filling.

Cocoa Cake

Ingredients:

  • ¾ cup butter
  • 1 ¾ cups sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups unsifted all-purpose flour
  • ¾ cup old fashioned cocoa
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups water

Directions:

  1. Cream butter or margarine and sugar until light and fluffy. Add eggs and vanilla. Beat 1 minute at medium speed.
  2. Combine flour, cocoa, baking soda and salt. Add alternatively with water to creamed mixture.
  3. Pour batter into 2 greased and flour cake pans. Bake at 350 degrees for 35 to 40 minutes for 8 inch pans.

Note: Cake is best when served hot.

Serving suggestion: Serve with vanilla ice cream on the side.
