Two Tasty Apple Recipes: Great Halloween Party Food!

Apples are in season now. What better time to select a few of your favorite types and enjoy them in a homestyle dessert?

Fall has arrived, and that generally means an abundant supply of apples at reasonable prices at your local grocery store. Take advantage of the wide selection of varieties available at this time of year by picking up a few bags of your favorite types of apples to eat fresh or to add to desserts. Search out recipes for home made apple sauce, candy apples, apple strudels, breads, cakes, cookies and more. Included below are two favorite recipes--one for Upside Down Apple Cinnamon Harvest Cake, and another for Traditional Apple Crisp (minus the oats) for you to enjoy.

Upside Down Apple Cinnamon Harvest Cake

Ingredients:

  • 5 apples
  • 3 cups of flour
  • 2 1/4 cup of granulated sugar
  • 4 eggs, unbeaten
  • 1/2 teaspoon of salt
  • 1/3 cup orange juice
  • 2 1/2 teaspoons of vanilla
  • 3 teaspoons of baking powder
  • 1 cup vegetable oil
  • 5 Tablespoons of granulated sugar
  • 2 Tablespoons ground cinnamon

Directions:

  1. Preheat oven to 350 degrees.
  2. Grease well, and flour Bundt cake pan
  3. Peel and slice the apples and set aside.
  4. In a small bowl, combine 5 Tablespoons of the sugar and 2 teaspoons of the cinnamon to create a cinnamon and sugar mixture. Set this aside also.
  5. In a large bowl, mix the flour, sugar, oil, unbeaten eggs, salt, orange juice, vanilla, and baking powder until smooth. (The batter will be thick.)
  6. In the bottom of the bundt pan, arrange a few of the apple slices, then a little of the cinnamon mixture.
  7. Layer 1/3 of the batter, then 1/3 of the remaining apple slices, then 1/3 of the remaining cinnamon mixture.
  8. Repeat layers twice, ending with a layer of cinnamon mixture.
  9. Bake in a 350 degree oven for approximately 1 hour and 35 minutes. Watch cake carefully and adjust baking time if necessary.
  10. Remove the cake from the pan (invert) to display the apples on top.
  11. Serve warm or cooled.

Traditional Apple Crisp (Without Oats)Ingredients:

  • 4 cups apples, sliced (about 5 medium apples)
  • 1/4 cup of granulated sugar or packed brown sugar
  • 1/2 teaspoon of ground cinnamon
  • 1/4 cup of water
  • 1 cup of flour
  • 2/3 cup granulated sugar
  • 1/2 cup butter or margarine, softened Directions:

  1. Preheat oven to 375 degrees.
  2. Cut apples into fourths, then core, peel, and slice to measure 4 cups.
  3. Put apple slices in a 8 x 8 x 2 inch baking pan.
  4. Mix 1/4 cup sugar and the cinnamon in a small bowl, then sprinkle mixture over apples.
  5. Pour 1/4 cup of water over the apples.
  6. Mix the flour, 2/3 cup granulated sugar, and the butter by hand in a medium bowl until crumbly.
  7. Sprinkle mixture over the apples.
  8. Bake 45 to 50 minutes.
  9. Remove from oven.
  10. Serve warm. May be served with whipped topping or ice cream.
