This recipe creates a wonderful peach cobbler with a fraction of the effort of a traditional cobbler recipe.
Peach cobbler is one of those tried and true, never out of style desserts, popular almost everywhere across the U.S. It brings to mind mild summer evenings, or deep winter days by the fire, and nearly everything in between.
This recipe is wonderful as a dessert, but it is also just as delightful to have for breakfast – yes, it's really that easy to make. Because it is equally tasty using either fresh peaches or canned peaches, it is perfect any time of year, whether peaches are in season or not.
Cheater Peach Cobbler Recipe
Ingredients
2 14 oz. cans of peaches in light syrup, OR
4-6 fresh peaches (depending on size) and
5 Tbsp. sugar
1 can premade ready-to-bake biscuits (whop biscuits); so called breakfast biscuits are better for this recipe than 'flake' or layered styles of biscuits
That's it! There are a few optional ingredients that can be added, however according to preference:
Sugar - if a sweeter cobbler is preferred; without it produces a tangy, bold cobbler
Cinnamon - adds a delightful spicy edge to the cobbler
1 Tbsp. flour or cornstarch - can be added to the syrup or juices to make a thicker sauce
Directions
Starting from canned peaches:
Preheat oven to 350 degrees (F).
Open can and place peaches and sauce in a deep baking dish.
If additional sugar, cinnamon or thickener is desired, add to syrup to taste and mix in well.
Open biscuits and place in a single layer on top of peaches. For quicker cook time, slice each one in half.
Place in oven and cook until biscuits turn golden brown on top and are cooked thoroughly (will vary considerably based on type of biscuits used). They will still be somewhat 'doughy' on the bottom because of the syrup.
Allow to cool slightly and enjoy!
Starting with fresh peaches:
Peel and divide peaches (can be in halves or slices)
Coat liberally in sugar and allow to sit for several hours, until a good amount of juices have been released.
If the peaches do not have enough juices, a little water (½ c. or less) can be added.
Preheat oven to 350 degrees (F).
Add additional sugar, cinnamon or thickener if desired to taste and mix well.
Place in deep baking dish.
Open biscuits and place in a single layer on top of peaches. For quicker cook time, slice each one in half.
