Steamed Pumpkin Pudding with Brandy Sauce Recipe

Steamed Pudding Made with Pumpkin for Christmas Dessert

This delectable Steamed Pumpkin Pudding can be served warm to ward off autumn chills or as the perfect dessert to end a Holiday meal.

Steamed Pumpkin Pudding can be made with either home made pumpkin purée (recipe listed at the end of the page) or canned pumpkin - not pumpkin pie filling.

Steamed Pumpkin Pudding with Brandy Sauce Recipe

Ingredients:

  • 1 2/3 cups flour
  • 1 tsp baking soda
  • ¼ tsp baking powder
  • ¼ tsp cinnamon
  • ¼ tsp nutmeg
  • ¾ tsp salt
  • ½ cup vegetable oil
  • 1 ½ cups sugar
  • 2 eggs
  • 1 cup pumpkin purée (canned or fresh pumpkin) *

Preparation:

  1. Butter a 6 cup pudding mold – coat with brown sugar.
  2. Sift flour, soda and baking powder, salt, cinnamon and nutmeg together in medium bowl.
  3. In a large bowl beat oil and sugar until combined.
  4. Beat in eggs one at a time.
  5. Beat in pumpkin purée.
  6. Fold in flour mixture until just blended.
  7. Pour mixture into pudding mold.
  8. If the pudding mold does not have a lid, cover with aluminium foil and tie string around the top otherwise cover mold with lid.
  9. Place a trivet inside a saucepan large enough to hold the pudding mold.
  10. Pour boiling water to fill saucepan half way.
  11. Place saucepan on medium heat and once water returns to boiling point insert pudding mold into saucepan.
  12. Cover saucepan with lid.
  13. Steam for 2 hours.
  14. Check water level after one hour and add more boiling water if necessary.
  15. After two hours, remove the pudding mold from the saucepan.

Brandy Sauce Recipe

Please note:

The following recipe contains raw eggs and is not recommended for young children, pregnant women or for people with a compromised immune system. Whipped cream can be substituted for the Brandy Sauce.

Ingredients:

  • 3 eggs, separated
  • 1 cup sugar
  • 2 tbsp soft butter
  • 1 cup 35 % cream, whipped
  • 3 Tbsp Brandy

Preparation:

  1. In bowl of stand up mixer, beat egg yolks, sugar and butter together until well fluffy, around 2-3 minutes.
  2. In separate bowl, beat egg whites until sof peaks form.
  3. Fold egg whites into yolk mixture along with the whipped cream
  4. Add the brandy.
  5. Refrigerate brandy sauce until ready to use.

To Serve Steamed Pumpkin Pudding:

  1. Remove the lid from the pudding mold and let stand for 10-15 minutes.
  2. Slide flat knife around the pudding to loosen it.
  3. Carefully unmold onto plate.
  4. Pour some of the brandy sauce over the steamed pumpkin pudding.
  5. Slice and serve on plate with extra brandy sauce if desired.

How to make Pumpkin Purée *

  1. Peel pumpkin (4-5 pounds), seed and cut into chunks.
  2. Place steamer basket in large sauce pan.
  3. Add one to two inches of water.
  4. Cover saucepan and bring to a boil.
  5. Add pumpkin chunks, cover and cook for about 15-20 minutes until soft.
  6. Purée in food processor until smooth.
  7. Use in any recipe that requires pumpkin purée.
  8. Makes 4-5 cups.
