A versatile yet inexpensive recipe for a favourite treat that can be flavoured to suit. This ice cream is a variation to traditional recipes which is simple yet effective

No matter how old and decrepit, most of us find it easy to go back in time to happy childhood memories when hearing the musical chimes of the local ice cream van in the neighbourhood. Ice cream is a first childhood treat and perhaps because of this we have a soft spot for any dessert with ice cream. Yet it is not traditionally a popular sweet to make at home. Hopefully this recipe will prove just how easy it is to make a basic ice cream at home, which needs very little equipment and which can be flavoured in any way to suit kids or adults.

This is a simple and foolproof, yet irresistable treat, which can be adapted for use on any occasion by skilful choice of flavouring. There is no need for expensive equipment, or expert culinary skills and the taste is as good as professionally made ice creams, indeed it is difficult to tell the difference. One medium sized tin of evaporated milk will make almost a litre of ice cream depending upon the flavouring used.

Ingredients

  • Tin evaporated milk
  • 3oz powdered sugar (made in liquidiser)
  • Flavouring and colouring as required and discussed hereunder

Method

  1. Place the tin of evaporated milk in a pan of water and bring to the boil.
  2. Allow to simmer for 10-15 minutes.
  3. Cool and then place in the refrigerator to chill
  4. Pour the milk into a bowl and whisk until thick and fluffy (approximately 3 mins with an electric mixer).
  5. Add the powdered sugar, flavouring and colouring and whisk for a further 5-10 seconds.
  6. Pour the mixture into a tray and freeze until firm.

Powdered sugar

Simply pour sugar into liquidiser and turn to maximum speed until the sugar turns to powder

Flavourings

  • LEMON - Add half tsp finely grated rind and 1 tsp juice
  • ORANGE - Add 1 dsp orange juice and 1 tsp rind
  • COFFEE - Add 1dsp powdered instant coffee
  • CHOCOLATE - Add 6oz melted chocolate
  • MINT RIPPLE - Add 2 drops oil of peppermint and swirl 2oz melted chocolate throughout the mixture
  • BANANA - Add 1 banana, first creamed in liquidiser
  • BLACKBERRY - Add 4oz of stewed blackberries
  • BUTTER AND PECAN - Replace powdered sugar with 3 oz brown sugar, 1tbsp butter, 3 oz pecan nuts

This is a delicious, creamy ice cream that is cheap to make and is a versatile accompaniment to any meal. It can be used to encourage kids to eat their 5 A Day or it can be spiced up for dinner parties with liqueurs. Seasonal fruits can be used as flavourings to provide vitamins and again will only cost pennies. For colouring add a drop or two of any colour of your choice.
