Oranges are full of vitamin C and are often just eaten raw, simply juiced or turned into marmalade. Why not try one of these alternative and delicious dessert recipes?
The orange is a citrus fruit and hence packed full of vitamin C so helps boost the immune system. Recipes for sauces to serve with fowl, such as duck à l’orange and recipes for preserving Seville oranges as marmalade are well known and easily found. However, there are some alternative ways of using up a glut of oranges as these three quick, easy and, most importantly, tasty pudding recipes testify.
Orange and Mango Fool Recipe
Ingredients:
4 largish oranges (or 8 smaller oranges such as satsuma, tangerine or clementine)
2 largish and ripe mangos
3 tbsp thick Greek style yoghurt or crème fraîche
Method:
Remove the flesh from the mango
Grate the rind from one of the larger oranges (or two of the smaller oranges) then peel them all and remove the pith
Segment the oranges and remove the pips
Keep four orange segments to one side and divide the rest between four individual dessert dishes
Liquidise the mango until it forms a purée then fold in the yoghurt or crème fraîche
Pour equal amounts over the orange segments in the dishes and decorate each one with one of the reserved orange segments
Pop in the fridge for a couple of hours before serving
Recipe for Orange and Coconut Layer Dessert
Ingredients (serves 4):
4 large, juicy oranges
4 tsp sugar
4 tbsp grated fresh (or desiccated) coconut
Method:
Peel the oranges, remove any pith and cut them into thin slices
Remove any pips and inner pith
Layer one quarter of the oranges in the bottom of a dish
Sprinkle with one third of the sugar and coconut
Layer another quarter of the oranges on top of the sugar and coconut
Sprinkle with another third of the sugar and coconut
Repeat the orange slice and coconut layers, ending with a layer of orange
Pop in the fridge for a few hours to allow the flavours to blend
For a bit of decadence and sophistication at an adult’s only dinner party, why not pour a shot or two of Malibu over the top before chilling
Recipe for Baked Oranges
Ingredients (serves 1):
1 large orange
1 tsp sugar
1 tsp lemon juice
Method:
Slice the orange into quarters leaving the peel intact
Put in a casserole dish, peel side down and sprinkle with the sugar and lemon juice
Bake in a pre-heated oven on gas mark 4, 180 C, 350 F for about 10 minutes or so until they are slightly browned or they can be warmed through under a low grill until just browning.
This will make an excellent breakfast dish but for a more decadent dessert after dinner, add a small slug of Cointreau or Grande Marnier to the lemon juice
