Make Peanut Butter Cookies, Peanut Butter Pie, Peanut Butter Candy

Peanut Butter, that old lunch box standard, shines in three delicious desserts recipes: peanut butter pie, peanut butter candy and peanut butter cookies.

Peanut Butter has always enjoyed a starring role in the PB & J sandwich, but it is a versatile ingredient that adds a familiar, but delicious flavor many baked goods.

Peanut Butter and Honey Cookies

Ingredients:

  • ½ butter
  • ½ cup peanut butter
  • ½ honey
  • ½ cup packed brown sugar
  • 1 egg
  • 1-1/4 cups of all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Directions:

  1. Use a mixer to cream the butter, peanut butter, honey and sugar together. Add the egg and beat until all the ingredients are well blended. Mix the dry ingredients together, then incorporated the dry mixture into the creamed mixture. Cover the dough and chill it for an hour or so.
  2. Form the dough into 1-inch balls and place them on a greased cookie sheet. Dip a fork in dry granulated sugar and use it to lightly flatten each cookie for the traditional peanut butter cookie look. The sugar helps keep the folk from sticking to the dough and it adds a bit of sparkle to the cookie.
  3. Bake at 350 degrees F, for 10 to 12 minutes. Cool slightly then move to a wire rack to finish cooling. Makes about 3 dozen cookies.

Peanut Butter, Coconut and Chocolate Candy

Ingredients:

  • 1 cup of butter
  • 1-1/2 cups graham cracker crumbs
  • ½ peanuts slightly chopped
  • 1 cup shredded sweetened coconut
  • 3-1/2 cups of powered sugar (a one pound box)
  • 12 ounces of peanut butter

Directions:

  1. Melt the butter in a sauce pan over low heat, then add the rest of the ingredients. Stir together until well mixed. If the mixture seems too soft to hold it’s shape, add more graham cracker crumbs. Form the mixture into one-inch balls, and chill.
  2. Coarsely chop 6-ounces of good quality dark chocolate and melt it in the top of a double boiler. Dip the peanut butter balls in the melted chocolate and set on parchment paper or waxed paper to harden. A bamboo skewer is helpful when dipping the peanut butter balls in the chocolate.

No-Bake Peanut Butter Pie

Ingredients:

  • 1 cup powdered sugar
  • 3 ounce package of creamed cheese
  • 1/3 cup plus 2 tablespoons of peanut butter
  • ½ cup of milk
  • 1 large carton of frozen whipped topping
  • 1 graham cracker crust
  • Shaved dark chocolate curls for garnishing

Directions:

  1. Use a mixer to beat the powdered sugar, creamed cheese, peanut butter and milk together.
  2. When the ingredients are well blended, fold in the whipped topping, pour the mixture into a graham cracker pie crust, and freeze.
  3. The dessert may be eaten frozen, or removed from the freezer about an hour before serving to soften.
  4. To garnish the pie, use a vegetable peeler and shave chocolate curls from a bar of dark chocolate.
