Early Fall Recipes Without Heating Up Kitchen

Late summer and early fall are still warm, despite the apple harvest. Keep your kitchen cool with these no-bake apple dessert recipe ideas.

While apples are thought of as a fall treat, they actually begin to ripen in late summer when there still may be balmy weather.

While apple pies and cobbler recipes are wonderful – making them in the oven is often unwelcome in an already-warm kitchen. Instead, take those late summer apples and create some no-bake treats. These dessert recipes call for very little cooking and are ready in a snap – and don’t require any oven baking.

Any variety of apples can be substituted in these recipes -- even heirloom varieties -- although make sure that you follow the directions for either “eating” apples or “cooking” apples. Don’t know the difference? See story: Difference Between Cooking and Eating Apples.

Easy Skillet Apples

6 servings

  • 3 large red cooking apples
  • 4 tablespoons butter
  • 3 tablespoons maple syrup
  • 2 teaspoons lemon juice
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon. salt
  • Heavy or whipping cream (optional)

  1. Core apples then cut into 1/2 inch thick wedges.
  2. In 12 inch skillet over medium heat, in hot butter, cook apples, maple syrup, lemon juice, cinnamon and salt until apples are tender, about 5 minutes, stirring frequently.
  3. Spoon apples and their syrup into six dessert bowls.
  4. Serve immediately with whipped cream if you’d like.
Spicy Apple Pancakes

  • 2 quarts of cooking apples – thinly sliced (about ¼ inch thick)
  • 1/2 cup maple syrup
  • 2 tablespoons butter
  • 1 1/2 cups biscuit mix (any kind)
  • 1 cup whole milk
  • 2 eggs
  • 1 tablespoon melted butter
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • ¼ teaspoon grated fresh ginger

  1. Melt butter in a large skillet.
  2. Add apples and syrup and cook until apples are tender but not falling apart (about 15-20 minutes).
  3. In a bowl, combine the remainder of the ingredients and mix until smooth. With a slotted spoon, take apples out of skillet and add to mixture and stir gently until apples are covered with mixture (save remainder of butter/syrup mixture).
  4. Pour (by ½ cupfuls) of batter onto a lightly greased hot griddle.
  5. Cook until the edges turn slightly brown, then flip over and cook the other side.
  6. Serve immediately with remaining syrup in which apples were cooked.
Apple Pudding

  • 12 cooking apples
  • 1 cup sugar
  • 3 tablespoons cornstarch
  • 6 tablespoons oatmeal
  • 3/4 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 2 tablespoons brown sugar
  • 4 tablespoons freshly squeezed lemon juice
  • 2 cups water
  • lemon juice

  1. Core, peel and slice the apples and place in a bowl. Set aside.
  2. In a large pot add water, cornstarch, oatmeal, brown sugar, white sugar, cinnamon, nutmeg, lemon juice and sugar.
  3. Bring to boil for about 5 minutes, stirring constantly, to thicken.
  4. Add apples gradually and stir often with a wooden spoon.
  5. When apples have softened (about 15 minutes), remove from heat and allow to cool then refrigerate.
  6. Serve with whipped cream if desired.
No Bake Apple Pie

  • 1 cup graham cracker crumbs
  • 10-12 eating apples, peeled and sliced
  • 2 quarts water, boiled
  • 3/4 cup brown sugar
  • 3-4 tablespoons flour
  • 1 teaspoons ground cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon ginger
  • 4 tablespoons butter
  • 2 teaspoons vanilla extract

  1. Sprinkle 1/2 cup graham cracker crumbs over bottom of deep-dish glass pie plate. Set aside.
  2. Simmer the apple slices in boiled water for 10-12 minutes.
  3. Drain apples in colander then return to the pan.
  4. Combine sugar, flour, cinnamon, nutmeg and ginger and stir into the pan with the apples. Add butter and vanilla to apples. Saute in pan on medium heat for about 5-7 minutes.
  5. Spoon apple mixture onto the pie plate with the graham cracker crumbs, and sprinkle remaining ½ cup of crumbs on top.
  6. Serve hot or warm with vanilla ice cream.
No Bake Apple Cookies

  • 1 cup, eating apples, grated finely
  • 2 cups brown sugar
  • 4 tablespoon unsweetened cocoa
  • 1/2 cup whole milk
  • 3 cups quick cooking oats
  • 1 stick butter
  • 1/2 cup smooth peanut butter
  • 1 teaspoon vanilla

  1. Combine sugar, cocoa and milk in a large pan.
  2. Heat to a boil then continue cooking for one minute.
  3. Add remaining ingredients, turn off heat, and stir until mixed.
  4. Spoon onto waxed paper.
  5. Allow to cool and refrigerate.
