Chocolate Rum Balls
3 1/4 cups crushed graham crackers (or vanilla wafers)
3/4 cup confectioners' sugar
1/4 cup unsweetened cocoa
1 1/2 cups chopped nuts, pulsed to medium fine
3 tablespoons light corn syrup
1/2 cup rum
Combine crushed graham crackers (or vanilla wafers), 3/4 cup confectioners' sugar, cocoa and nuts. Blend in corn syrup and rum. Shape into 1-inch balls; roll in additional confectioners' sugar. Store in an airtight container several days to enhance flavor. Roll again in an equal mix of cocoa powder and confectioners' sugar before serving. Makes about 70 medium rum balls.
The secret to this recipe is to take the time to make the balls and store them for up to two weeks to develop the rich flavors. Different rum proofs may be used and can be designated by coloring the confectioner’s sugar with food coloring or rolling the rum balls, immediately before serving, in different coarse colored cookie sugars.
