Ice cream is a favorite treat for children and grownups alike. Learn how to ice cream at home for an extra-special treat.

Homemade ice cream is not only a fun family activity, but it ends with delicious results. Whether the ice cream is made at home purely for enjoyment or to be shared as a wonderful dessert it is certainly a kitchen adventure worth taking. Below are two different ways that ice cream can be made at home.

How to Make Ice Cream with an Ice Cream Maker

Vanilla Ice Cream

  • 2 cups milk
  • 1 small vanilla bean, split
  • 8 egg yolks, beaten
  • 3/4 cups sugar
  • 1/4 teaspoon salt
  • 4 tablespoon vanilla extract
  • 2 cups heavy cream

Directions:

  1. In a saucepan, heat the milk just until bubbling. Remove from the heat, add the vanilla bean and set aside to cool just until warm.
  2. Remove the bean and place the seeds into the saucepan with the milk. In a separate bowl, whisk the egg yolks, sugar, salt and vanilla until thick and creamy. Continue whisking while gradually adding the warm milk.
  3. In a heavy saucepan cook this mixture over low heat while whisking continuously for 6 minutes or until the mixture coats the back of a spoon and reaches 170 degrees F on a candy thermometer.
  4. Strain the mixture into a bowl and stir it while it cools. Whisk in the cream, cover the bowl and chill in the refrigerator for 1 hour.
  5. Pour the mixture into an ice cream maker and churn according to the manufacturer's directions.
  6. Serve immediately or store covered in the freezer.
  7. Ice cream that has been frozen may need to be thawed in the refrigerator for 15 to 30 minutes before serving.

How to Make Ice Cream Without an Ice Cream Maker

With some extra time and effort, ice cream can be made at home without an ice cream maker.

  1. Follow steps 1 - 3 in the recipe above.
  2. Strain the mixture into a large bowl and stir it while it cools. Whisk in the cream, cover the bowl and chill in the refrigerator for 1 -2 hours until well chilled.
  3. Transfer the bowl to the freezer for about half an hour. Check the mixture. The edges should have begun to freeze but not fully through the center. When this state has been reached, remove from the freezer and beat until the ice cream is creamy once again being sure to break up any ice crystals that may have formed.
  4. Repeat this three times before allowing to freeze through.
  5. Serve immediately or store covered in the freezer.
  6. Homemade ice cream may need to be thawed in the refrigerator for 15 to 30 minutes before serving.
