These easy slice recipes based on Weetbix breakfast cereal are simple to make and guaranteed to please.
Sanitarium Weetbix are a flaked-wheat biscuit and a traditional Australian breakfast cereal. They are commonly served with milk in a bowl or eaten with butter and jam or other toppings as a toast substitute.
They are also a versatile cooking ingredient and crushed Weetbix can replace breadcrumbs in most recipes.
These two slice recipes are so easy that they are great recipes for children to prepare with only limited supervision. They take less than 10 minutes preparation time and only 20 minutes cooking time. Ideal for school lunchbox snacks, they can easily be prepared at short notice and are well-suited to serving with tea or coffee for a mid-morning or afternoon snack.
Chewy Chocolate Weetbix Slice with Chocolate Icing
1 cup brown sugar
2 tablespoons cocoa
1 cup self-raising flour
½ cup shredded coconut
4 weetbix, crushed
125g unsalted butter, melted
1 egg, lightly beaten
Icing
2 cups icing (confectioner’s) sugar, sifted
2 tablespoons cocoa
2 tablespoons hot water
Preheat fan-forced oven to 160C (320F). Line a square or rectangular slice tin with baking paper. A square tray will give a thicker slice, although there will be fewer pieces.
Place all dry ingredients in a bowl. Add melted butter and egg and stir until well combined.
Press slice mixture into the prepared slice tin and bake for 20 minutes.
Remove from oven and allow slice to cool in pan.
Mix together icing ingredients until combined. Spread over cooled slice and allow to set
For a variation, replace the hot water in the icing with orange juice. This slice also tastes great served warm with whipped cream or ice-cream.
Orange Weetbix Slice
1.5 cups self-raising flour
3 – 4 Weetbix, crushed
¾ cup desiccated coconut
½ cup brown sugar
1 egg
150g butter, melted
2 tablespoons orange juice
Icing
2 cups icing (confectioner’s) sugar, sifted
2 tablespoons orange juice
