The best homemade pumpkin pie recipes are adaptable. It's easy to make this a low carb pumpkin pecan pie recipe, and children have fun helping make the dessert.

Every Fall and Winter, many families are faced with the same dilemma: What to do with all this leftover pumpkin? Making homemade pumpkin custard and pumpkin pie are easy solutions. There are many variants on the theme, of course, but this Easy Pumpkin Pie Recipe is among the best. Children have fun helping out: Add pecan topping for extra crunch, or bake the pumpkin pie as custard, without the crust, for a more low carb pumpkin dessert recipe.

Handed down from generation to generation, this is affectionately called "Grandpa Pete's Jack-o-Lantern Pie" in a few homes. If you lack a Grandpa Pete, however, it may be thought of more simply as one of the best homemade Easy Pumpkin Pie Recipes in the world!

Easy Pumpkin Custard Pie Recipe

  • One unbaked 9" graham cracker pie crust
  • 2 cups of solid pack pumpkin puree - NOT pumpkin pie filling, which is already sweetened. Canned pumpkin works just as well as fresh.
  • 2 large eggs
  • 1/2 cup sugar - use Splenda for a more low carb pumpkin pie.
  • 1 1/2 cups milk
  • 2 tbsp molasses - use dark rum for a more low carb recipe
  • 1/2 tsp salt
  • 1 tsp ginger,
  • 2 tsp cinnamon
  • 1/4 tsp cloves, if notably spicy pumpkin pie is desired
  • 1 cup pecan halves
  • optional Reddi-whip - use unsweetened whipped heavy cream for the low carb recipe

Easy Pumpkin Custard Pie Baking Directions

  1. Prepare pie shell (cover the edge of crust, where the pumpkin custard will not touch, with foil to prevent burning)
  2. Preheat oven to 450
  3. Beat eggs with sugar or Splenda, salt, molasses or dark rum, and spices until well blended. Add milk and pumpkin, mix well. If cloves are included, pass through blender.
  4. Pour pumpkin custard mix into pie crust. For a more low carb pumpkin pie recipe, forgo the pie crust and pour mixture into baking dish for pumpkin custard.
  5. Bake on lower shelf
  6. After 10 minutes, reduce heat to 400 for an additional 30 minutes. Pie will be done when a knife stuck in center comes out clean - no uncooked pumpkin sticks to it.

While this homemade pumpkin pie is still warm, lightly press pecan halves along its surface. Pumpkin Pecan Pie is almost as easy as this Easy Pumpkin Pie Recipe - and children love to help decorate it. Let the kids put the pecan halves on the pie themselves.
