Ingredients:
1 1/4 cups granular sugar substitute
3/4 cup butter spray
1/4 cup of egg beaters
2 tablespoons sugar-free pancake syrup
1/2 teaspoon vanilla extract
1 1/2 cups wheat bran
1/4 cup soy flour
1/4 cup whole-wheat flour
1/4 cup whole-grain pastry flour
1/4 cups of fiber powder
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup sugar-free chocolate chips
1/4 cup (finely chopped) dried figs
Heat oven to 350 degrees. In large bowl, mix butter spray and sugar substitute with a wooden spoon until well combined. Add egg substitute, pancake syrup, and vanilla; mix well.
In a bowl whisk together bran, soy flour, whole wheat flour, pasty flour, baking powder, chopped figs, fiber and salt. Add dry ingredients to butter mixture; mix well. Fold in chips.
Drop dough by tablespoonfuls onto un greased baking sheets. Space dough 1 1/2 inches apart and flatten with the palm of your hand.
Bake 14 minutes or just until cookies begin to turn golden brown. Cool on sheets for 5 minutes before transferring to cooling racks to cool completely.
