Fresh fruit and dessert are a great combination. These recipes recreate the flavors of a couple of ice cream favorites.
No one wants to be stuck in a hot kitchen cooking, let alone baking, while the rest of the family is out enjoying summer activities.
No-bake dessert recipes are essential during this time of year. Ice cream is the old stand by as far as quick, cool summer desserts are concerned. If a little variation is desired, try one of these simple and tasty summer pie recipes that put a new twist on old favorites.
2 (8 oz) pkg of reduced fat Philadelphia brand cream cheese, softened
1 (20 oz) can crushed pineapple, drained
4 bananas, sliced and divided
2 cups cold milk
2 pkg. (3 oz) Jell-O Vanilla Flavor instant pudding and Pie Filling
1 cup chopped pecans
i jar maraschino cherries
Directions:
Mix together graham cracker crumbs, 1/4 cup sugar, and melted butter. Press onto the bottom of 13x9-inch pan. Put in freezer for 8-10 minutes.
Beat softened cream cheese with remaining sugar until well blended.
Spread cream cheese mixture over the crust carefully (the layer should be a bit thin)
Top the spread cream cheese with crushed pineapple. then top the pineapple with sliced bananas
Pour the milk and dry pudding mixes into a large bowl. Beat for 2 minutes, or until well blended. Fold in one cup of Cool Whip.
Spread pudding mixture over the layer of bananas. Top with remaining Cool Whip
Refrigerate at least 5 hours
Cut pie into squares. Just before serving, top pie with maraschino cherries (fresh sliced strawberries or more sliced bananas may be substituted) and sprinkle chopped pecans.
Peaches 'n Cream Delite Recipe - 8 servings
Ingredients:
1 1/2 cups Nilla Wafers crumbs
1/3 cup butter, melted
3/4 cup boiling water
1 pkg. orange flavored Jell-O Brand Gelatin
2 cups ice
1 1/2 cups Cool Whip topping
2 large fresh peaches, peeled and cut into cubes
Directions:
Mix together wafer crumbs and melted butter. Press crumb mixture onto bottom and side of a 9-inch pie plate.
Stir boiling water into dry gelatin; mix until completely dissolved. Add ice cubes to gelatin. Stir until gelatin begins to thicken. If any ice pieces remain unmelted, remove.
Stir whipped topping into gelatin mixture until well blended
Add chopped peaches
Refrigerate for about 20 minutes, then spoon thickened mixture into prepared crust.
Refrigerate for an additional 3 hours.
Strawberries 'n Cream Variation
If a Strawberries 'n Cream pie is preferred, simply substitute the orange jello for a berry flavored one and instead of adding fresh peaches, add a pint of cut fresh strawberries.
Both of these recipes may be tweaked to incorporate seasonal fruit.
