Cranberry Surprise Pie

Makes 1 Pie Serving 6 to 8

Ingredients:

  • 1 cup fresh cranberries
  • 1/4 cup granulated sugar
  • 1/4 cup chopped walnuts
  • 1 egg
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose white flour
  • 1/4 cup melted butter, with extra for greasing pan
  • 2 tablespoons melted shortening

Directions:

  1. Preheat oven temperature to 325F (165C)
  2. Grease an 8 inch pie plate with oil or a teaspoon of butter
  3. Spread fresh cranberries over bottom of the pie plate
  4. Sprinkle fresh cranberries with 1/4 cup granulated sugar and chopped walnuts
  5. In a medium sized bowl, beat egg while gradually adding 1/2 cup granulated sugar. Continue mixing until well combined.
  6. To the egg and sugar mixture, add all-purpose flour, melted butter and melted shortening. Beat well and pour batter over the cranberries in the pie plate.
  7. Bake at 325F (165C) for 45 minutes or until the crust is golden brown
  8. Allow the pie to cool before slicing
  9. Top with ice-cream or whipped cream
