Cranberry Crunch is an easy to make bar cookie featuring either canned whole cranberries or canned cranberry sauce. The cranberry squares are easy to make and can work perfectly as a Thanksgiving or Christmas dessert. Cranberries no longer need to be used only at the holidays as this dessert can be made anytime of the year.

An Easy Bar Cookie Recipe Using Canned Cranberries

Guests will be impressed with the cranberry crunch squares, as many people often wonder what to do with cranberries. The recipe assembles within minutes and takes less than an hour to bake. From start to finish, the dessert can be ready in one hour. This unique holiday recipe can be made throughout the year for an impromptu dinner party of grade school event.

Store up on cranberries during the holiday season when canned cranberries and cranberry sauce are on sale. The cans can be placed in the cupboard for future use, whenever a quick dessert is needed.

Cranberry Crunch Squares

Serves 6 to 8

Ingredients:

  • 1 cup uncooked rolled oats (old-fashioned style rolled oats)
  • 1/2 cup all-purpose white flour
  • 1 cup lightly packed brown sugar
  • 1/2 cup butter, and extra for greasing the baking dish
  • 1/4 cup chopped walnuts (optional)
  • 1 teaspoon fresh orange zest (optional)
  • 1/4 teaspoon ground cinnamon (optional)
  • 1 can whole cranberries or cranberry sauce

Directions:

  1. Preheat oven to a temperature of 350F (160C)
  2. Grease a small baking dish, 8 inches by 5 inches, with a bit of butter
  3. In a medium sized bowl, combine the uncooked rolled oats, all-purpose flour, and brown sugar. Use a spoon to stir together. Optionally, you can boost the flavor of this dessert by adding chopped walnuts, orange zest, or even a bit of cinnamon to this dry mixture.
  4. Using a pastry cutter, cut in the butter until the mixture becomes crumbly and the butter pieces are no longer than the size of a small pea.
  5. Place half of this dry mixture into the bottom of the baking dish. Smooth into an even layer.
  6. Add the canned cranberries to the baking dish to form the next layer, smoothing to make it even
  7. Place the remaining dry mixture on top of the cranberries, smoothing the final layer evenly
  8. Bake in a 350F (160C) oven for 45 minutes or until golden brown
  9. Allow to cool before cutting into squares
  10. May be topped with ice-cream or eaten as-is
