Every fall there is a mad dash to find new and interesting cranberry recipes in anticipation of Thanksgiving. While cranberries are usually regulated to cranberry sauce, many people want to explore new uses and are left wondering, “What can I do with fresh cranberries?”

The tart cranberries work perfectly in quick bread recipes and are elevated in taste when paired with oranges and nuts. This particular cranberry bread recipe stretches beyond this common trio to also include cheddar cheese. The cranberry tartness and sweet orange flavors are complemented by the richness of the cheddar cheese.

An Easy Fresh Cranberry Recipe

Cheddar cranberry bread makes for a light holiday dessert, especially at Thanksgiving but also for Christmas, or it can be served as breakfast or at a brunch. Cranberries can be found on sale during the holiday season and freeze well. Placed the washed and dried cranberries into a tightly sealed freezer storage bag. Simply add the frozen cranberries to this recipe for a quick and easy Thanksgiving dessert.

Cheddar Cranberry Bread

Makes 1 Loaf

Ingredients:

  • 2 cups all-purpose white flour
  • 3/4 granulate sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup fresh cranberries, cut in half
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped pecans
  • 1 tablespoon grated orange zest
  • 3/4 cup orange juice
  • 1 egg, slightly beaten
  • 2 tablespoons butter melted

Directions:

  1. Preheat oven to 350F (175C)
  2. Grease a 9 inch by 5 inch loaf pan with butter, then lightly dust with flour. Tip out any excess flour and set aside.
  3. In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, salt, baking soda. Gently stir in the fresh cranberries, shredded cheddar cheese, chopped pecans and orange zest.
  4. In a small bowl, mix together the orange juice, beaten egg, and melted butter. Stir this wet mixture slowly into the dry ingredients just until it is fully moistened and the batter forms.
  5. Pour batter into prepared loaf pan and use spoon to smooth out the top.
  6. Place loaf pan into the preheated oven and bake for 1 hour or until the center tests done.
  7. Cool in the pan for 10 minutes before turning out onto a wire rack to finish cooling to room temperature.
  8. Slice and serve with butter or clotted cream.
