Allie Way Homemade Pecan Pie Recipe
Serves 8
Ingredients:
3 eggs
1 cup light brown sugar
1 cup Karo syrup
1 tablespoon vanilla
1 1/2 cups pecans
1 pie crust
Directions:
Defrost one frozen pie crust, according to the directions on the package.
Preheat the oven to 350 degrees Fahrenheit.
Place the defrosted pie crust into a 9-inch pie plate. Press the crust into place, and trim crust edges as necessary.
In a medium size mixing bowl, combine the eggs, brown sugar, Karo syrup, vanilla and pecans. Stir with a fork until all ingredients are evenly distributed throughout the mixture.
Pour the mixture into the pie crust filled baking pan.
Bake the pie for 60 minutes.
Once baked, let the pie cool uncovered. To serve, cut the pie into eight slices. Plate each slice with a scoop of vanilla ice cream or a dollop of cool whip for a cool, creamy contrast to the pie's crunchy pecans and sweet, soft filling.
This family favorite is perfect for any occasion; as an accompaniment to coffee with friends, as a contribution to a Kentucky Derby party, as a Thanksgiving dessert, or as the grand finale to a homemade dinner for someone special.
Kitchen tips:
Freezing bags of pecans keeps them fresh longer than storing them in the cupboard.
Using pecan halves, as opposed to chopped pecans, results in a more decorative pie. Pecan halves also allow for more texture contrast between the layer of pecans that floats to the top of the pie and the sugary part that forms the pie filling.
Cooling the pie uncovered prevents it from becoming soggy.
Once the pie has been slice and served, store any leftovers in a closed container at room temperature.
When serving ice cream with pie, place a scoop on the plate to the side of the pie. This placement allows guests to see the pretty slice of pie in its entirety. It also allows guests to enjoy dessert elements separately or together, according to their tastes.
